Today was a day of tackling various tasks, from cooking a new recipe to organizing my shoe collection and finding a solution to a pesky draft at the front door. In this blog post, we'll dive into the details of my day, highlighting the successes and setbacks, and exploring how these experiences can be applied to everyday life. One of the highlights of my day was finally getting to make a recipe I've been eager to try: gluten-free chicken nuggets using almond flour, eggs, smoked chipotle, and nacho chips. The process began with measuring out the almond flour and seasoning it with taco seasoning. Next, I measured out egg whites and seasoned them with the same taco seasoning. Instead, I felt tired, overwhelmed, and uncertain about my emotional state. Was I tired, depressed, or a combination of both? It was hard to tell.
